Team member Stefano Biasini is a founding partner of the award winning and landmark Gran Caffe L’Aquila in Philadelphia. Chef Biasini was also the founder of the original Gran Caffe L’Aquila which was destoyed in the Earthquake of 2009. Chef Biasini is the 2013 Italian Gelato Champion winning the Gelato D’oro in Rimini.

The Following Year (2014) as captain of the Italian Gelato World Cup team he won the International Press Award as well as a special award for best Gastronomic Gelato. After the opening

of the Philadelphia Location in 2015 Chef Biasini’s Gelato was Awarded “Best Of Philly” after just 6 months.

In 2016 Gran Caffe L’Aquila Philadelphia was awarded the Philadelphia Conceirge Association Best Restaurant in Philadelphia. In 2017 the Italian American Business Council awarded Gran Caffe L’Aquila the International Business Award of the year. Chef Biasini’s sweet and savory gelatos have been covered by media both nationally and internationally.



Team member Chef Darrell Folck graduated from the California Culinary Academy in San Francisco (1995). Experience: Apprentice at the Carnelian Room in San Francisco (1996-1998), Sous Chef at Maxwell hotel (1998-1999), Kokkari restaurant (1999), Coto de Caza Golf Resort in Mission Viejo (1999-2002), started there as a Banquet Chef, promoted to Executive Pastry Chef, then Executive Chef. Became an instructor at California School of Culinary Arts (2002), won Educator of the Year for CEC Corporation (2003), became Executive Pastry Chef of California School of Culinary Arts managing the production operation (2004).

At the age of 29 became Certified Executive Chef in (2005), won Chocolatier of the Year in Los Angeles (2008), won 1st place Chocolate Salon LA (2009), Top Ten Chef Instructor of the Year in the USA from Chef 2 Chef, #10 (2009) and then won Chef Educator of the Year for Le Cordon Bleu Los Angeles (2009). Became a Certified Executive Pastry Chef and ACE for the ACF (2009). Western Regional Semi Finalist for ACF Pastry Chef of the Year in 2013 and 2014. Currently he is a Baking/Pastry chef instructor for the Oregon Coast Culinary Institute.



Team member Lyn Wells culinary career began at a young age working at her family’s farm to table restaurant. She has participated in over 25 sanctioned culinary competitions nationwide, earning scores of medals and awards, including ACF western region student chef of the year in 2013. She went on to apprentice for ACF National Chef of the year finalists twice and was an apprentice for the 2012 ACF National Pastry Chef of the Year. She achieved all this while completing her Associate of Applied Science (AAS) in Culinary Arts & Bachelor of Science (BS) in Hospitality Management at Utah Valley University.

In October 2014, she competed in the BKB Young Mentor Competition in Los Angeles, California, where she took first place, and won a three-month stage at The French Laundry (TFL) in Yountville, California. There she continued to build on her cooking techniques and push herself to new heights. During her stage, she was able to rotate through each station, and to receive first class experience at a 3 Star Michelin restaurant.

Upon completion of her mentor scholarship at TFL, her focus turned to completing her Master of Business (MBA) at UVU’s Woodbury School of Business, which will be completed by early August, 2017. During this time, her culinary desire and her passion for competition led her to becoming a 2016 world finalist in the Chaine des Rotisseurs Jeunes Chef competition as well as a bronze medalist at the 2016 World IKA Culinary Olympics.



Chris Foltz

Chef Chris Foltz, a returning team member of the 2016 USA Gelato Team, won first place in the ice-carving phase of the 2016 Gelato World Cup and woke up the world with his skills. He graduated from the Baltimore International Culinary College, culinary and baking programs. He has worked in Vegas, Nassau, Baltimore, Alaska, Ireland, and all around the United States. He is currently the Executive Chef of The Mill Casino & Resort in North Bend, Oregon.

Professional Ice and Wood Sculptor for the last 9 years. More than 15 international 1st place Titles including a record setting 3 wins in a row at the Fairmont Chateau Lake Louise International Invitational for Ice Sculpture. As well as three 1st place titles at the Chetwynd International World Championships for Wood Sculpting in the last 4 years. Winner of the Return of the Champions Masters competition hosted in Chetwynd BC 2012 for Wood Sculpture Winner of the Return of the Champions Masters competition hosted in Banff Lake Louise 2014 for Ice Sculpture. Profiled on Discovery Channel “Saw Dogs” season finale “Masquarave” in Whistler BC and consultant for “Carver Kings” Reality TV Series in British Columbia Canada coupled with “Timber Kings.”
